چکیده

salt emulsion (average diameter of particles; 2.0"m) to evaluate its efftictiveness during the digestion of highly oxidiizabile eils. The actiyity of quercetin increased vvith the lowering of the initial peroxide yalue (PV) of the oil and its effectiveness was superier to that of ct-tocepherol. A synergistic antioxidant effbct was observed upon the additiore of quercetin and ct-tocopherol irrespectiye of the initial PV of tke oils, and quercetin was consumed faster than ct-tocopherol. The loss of quercetin was larger than that ef ct-tocopherol when cumene hydropeToxide and metmyoglobin were mixed in a trimyristin-bile salt emulsion. In an ultrafiItration experiment on emulsified oil with a membrane filter of 100nm pore size, the recovery of quercetin in the filtrate was hagher than that of ct-tocopherol.
