The actiyity of quercetin increased vvith the lowering of the initial peroxide yalue (PV) of the oil and its effectiveness was superier to that of ct-tocepherol. A synergistic antioxidant effbct was observed upon the additiore of quercetin and ct-tocopherol irrespectiye of the initial PV of tke oils, and quercetin was consumed faster than ct-tocopherol. The loss of quercetin was larger than that ef ct-tocopherol when cumene hydropeToxide and metmyoglobin were mixed in a trimyristin-bile salt emulsion. In an ultrafiItration experiment on emulsified oil with a membrane filter of 100nm pore size, the recovery of quercetin in the filtrate was hagher than that of ct-tocopherol.
